Chocolate Meringue Pie

"To die for" Chocolate Meringue Pies

Prepare 2 pie crusts before starting filling.

Ingredients:

4 cups milk
2 cups sugar
4 eggs separated
2 teaspoons vanilla
2 tablespoons butter
8 tablespoons cocoa
8 tablespoons cornstarch
dash salt

Mix cocoa with sugar and set aside. Mix the egg yokes with milk and cook in a double boiler stirring constantly until warm. Add sugar and cocoa and cook stirring constantly until thick. Mix in butter and vanilla and remove from heat. Pour filling into pie crusts.

Meringue:

egg whites
1/4 teaspoon cream of tartar
3/4 cup white sugar

In large bowl, beat egg whites and cream of tartar with electric mixer until foamy. Gradually add sugar, beating until mixture forms stiff peaks. Top pies and brown in oven watching often.

Chill pies overnight before serving
