Sweet Potato Casserole
4 cups mashed sweet potatoes
1/2 cup melted butter
2 tablespoons brown sugar
2 Eggs -- beaten
1/2 cup evaporated Milk
1 tsp. nutmeg
1 tsp. cinnamon
Topping:
1 cup Pecans -- coarsely chopped
1 cup Packed brown sugar
5 tablespoons Flour
4 tablespoons melted butter
Cook sweet potatoes (canned may be used) until soft and drain well (rinse syrup from canned with warm tap water prior to mashing). Mash well.
Mix the sweet potatoes, butter, sugar,
nutmeg & cinnamon. Beat in the eggs and evaporated milk.
scoop into a glass rectangular cake casserole dish.
Combine the pecans, brown sugar and flour.
Stir in 2 tablespoons of melted butter.
Sprinkle the mixture over the sweet potatoes
and bake at 325 for 30 minutes.
Can be made in advance and warmed.
